A delicious recipe for a cold winter day
There’s nothing better on a cold winter day than a bowl of warm soup. One of my family’s favorites is this hearty potato soup. Its a great meal for a frigid evening and goes great with cornbread. This simple recipe has lots of flavor and will leave you begging for seconds! You can make it on the stove top, or if you want to, put it in the slow cooker and your meal will be ready when you get home.
- 4-5 large potatoes cubed
- 1 bunch of celery chopped
- 3-4 carrots
- 2 tbs minced garlic
- 1 – 12 oz package of bacon diced
- 1 large yellow onion diced
- 32 oz chicken broth
- 1 – 26 oz can of condensed cream of mushroom soup
- 4 cups heavy cream
- salt and pepper
- parsley flakes
- shredded cheese
In a 6 quart stock pot cook bacon over medium heat. Add onion, garlic and celery to the cooking bacon. Cook until bacon browns slightly and onion and celery become tender. Add chicken broth, potatoes, and carrots. Simmer over medium heat until potatoes and carrots soften. Add cream of mushroom soup, heavy cream, parsley, and salt and pepper to taste. Allow to simmer until all ingredients are well combined. Serve topped with shredded cheese and a side of corn bread.
Slow cooker directions – Cook bacon, onion, garlic, and celery in same manner as above. Combine all ingredients in slow cooker and cook on low 5-6 hours.
